Sweet Potato Gnocchi with Mushroom Cream

Ingredients 

1 500g packet Pasta Reggio Sweet Potato Gnocch

200g Swiss Brown Mushrooms

30g Grated Parmesan Cheese

300g Cream 

40g Butter

2 tbs Olive Oil Salt & Pepper to Talk 

Chopped Fresh Parsley to garnish

 

Method

1. Bring a pot of salted water to the boil.

2. In a frying pan add olive oil and butter and melt the butter.

3. Add Gnocchi to Boiling water to cook. 

4. Add cream to frying pan and cook down until it reduces by half. 

5. Once gnocchi are cooked add to pan and toss. 

6. Mix in parmesan cheese. Add a little of pasta water if sauce is to thick. 

7. Garnish with the parsley and serve.
